Job Description

The RoleMajor Recruitment Ltd are currently recruiting for an experienced Bar and Lounge Manager to join a reputable Hospitality company in Leicester. This role is a permanent position and is a challenging role where customer care and high standardsalways comes first. This position focuses on ensuring the successful delivery of Food and Beverage service across three bars and lounges. The role is balanced between working operationally within the areas of responsibility and developing and implementingoperational standards. A large focus for this role is ensuring continual training and development of team members. You will be responsible for ensuring the business offers a relevant, consistent, on-trend bar and lounge service to all guests. Within the roleyoull take the time to talk to people, build a genuine rapport and identify exactly what the customers want.As the Bars and Lounges Manager, you will need

  • Extensive knowledge of Bar/Lounge operational procedures.
  • Knowledge of menu composition.
  • Knowledge of beverage & cocktail preparation.
  • Knowledge of beverage laws; food handling standards and safety and sanitation.
  • Knowledge of & ability to implement liquor control procedures.
  • Ability to convert the knowledge of wines and alcoholic beverages into product sales and service.
  • Knowledge of pricing rationale and strategies.
  • Knowledge of purchasing, inventory controls, supplies and equipment.
  • Knowledge of governmental regulations and safety standards.
Your duties will include,Operational and Administration tasks
  • Works operationally within the three areas to ensure successful delivery of business.
  • Regularly leads shifts within all three areas.
  • Monitor quality of food and beverages served.
  • Ensure promotions occur that drive sales within all three areas.
  • Ensure stocktakes occur and manage the safety of stock and other high value items.
  • Is highly visible and interfaces with customers on a regular basis to obtain feedback on service levels and overall satisfaction; effectively responds to and resolves guest problems and complaints.
  • Completes competitor checks.
  • Completes menu engineering, comp set analysis and support with menu development.
  • Produce rotas - ensuring economic utilisation of staff and satisfaction of peak period demand. To use this information to ensure the weekly labour forecast is accurate and within budget.
  • Helps manage supplier relationship.
  • Responsible for recruitment, training and development and welfare of all relevant personnel.
  • Utilise departmental feedback matrix to help spot trends/concerns and target training/service developments to help drive standards.
  • Ensure a sustainable cleaning and maintenance programme is maintained within the departments.
Financial
  • Ensure the Departmental financial Targets are achieved and regularly reviewed with team.
  • Supports with pricing reviews.
  • Gains a full working knowledge of our EPOS to ensure pricing updates are carried out promptly and correctly, and a full knowledge of billing procedures.
  • Responsibility for the profitability of the Department, working within a cost of sales budget.
  • Responsibility for the payroll in the department and give clear explanation of factors impacting discrepancy from budget.
  • Drive beverage sale initiatives.
  • Ensures beverage inventory levels are kept in accordance guidelines.
Health & Safety
  • Conform to all Health, Safety and Hygiene rules and regulations including COSHH and drive conformity with team.
  • Ensure communication of the allergen control procedures ensure that hygiene training is provided for all relevant staff.
  • Ensure areas remain clean, hygienic.
  • Supports and drives implementation of related F&B projects that may include the refurbishment and rebranding of areas.
The HoursWorking hours as required to do your job not less than 39 hour per week, includes some weekends and evenings.Your Profile

To be considered for this role you must have a minimum of department head level experience, Food and Beverage "front of house" knowledge and Food and Beverage Service experience at high level.The Salary£30,000 -£33,000 basicMajor Recruitment act as an Employment Agency for permanent roles and an Employment Business for temporary opportunities
