Job Description

As a Development Chef, your role will be to create new and modify existing recipes in line with written briefs, customer expectations and financial targets to deliver products of repeatable quality.Key Accountabilities:

  • Develop new and existing recipes, in the development kitchen, in line with the great food agenda, delivering products of consistent quality and taste
  • Co-create recipes alongside the product development team, considering customer food brand standards, nutritional, shelflife and cost targets considering operational capabilities following the product development procedures, to deliver the recipe to thecustomer brief
  • Propose new raw material and packaging requirements, working in partnership with the product development team, to brief these out of the NPD buyer so that suppliers receive appropriate feedback on the samples and packaging provides optimum product protectionin transit and creates buying appeal
  • Develop and then input recipes onto the recipe management system to assess the food cost and nutritional information ensuring delivery against the brief
  • Demonstrate the assembly of products and explain the production method at feasibility meetings to gain sign off for customer submissions
  • Complete organoleptic, cooking and freezer validation tests and support product developers to conduct recipe validation tests for all products following the product development procedures to ensure all products are of repeatable and sustainable qualitybefore NPD to process handover e.g. viscosity, weight, yield tests
  • Prepare samples, set up and deliver professional internal and external product panels as required for EPD, NPD or benchmarking, cooking up products were relevant and documenting the findings and action plan for next steps
  • Follow the critical path time lines as directed, escalating incomplete tasks and deficiencies in testing, to ensure that mitigating action can be taken to prevent delays in product acceptance and launch
  • Attend process scale up trials and provide kitchen samples to ensure production samples match the kitchen quality signed off by the customer
  • Work alongside the Head development chefs to have creative input into innovation agenda

  • Demonstrates a real passion for food
  • Has good food skills in a given discipline as demonstrated by;
    • Restaurant Training – broad experience in a fast paced environment
    • Ability to translate restaurant standards to manufacturing
  • Has some relevant manufacturing experience which demonstrates their understanding of what isachievable in a manufacturing environment
  • Numerate and commercial; able to accurately cost and adapt to briefed recipe costs and margin targets
  • PowerPoint and Presentation Skills ; appears credible and professional with customers
