Job Description

JB188: Head ChefLocation: Hatton, WarwickSalary: £40,000 - £50,000 per annumOverview:First Military Recruitment are currently seeking a Head Chef on behalf of one of our clients.To plan, implement and control the following functions within the kitchen area with a view to enable the organisation & standards of the department to be achieved in both the restaurant & the bar area.Our client encourages applications from ex-military personnel however all candidates will be given due consideration.Duties and Responsibilities for the Head Chef:

  • To plan the preparation, presentation and service of all food to enable the sales targets to be achieved.
  • To plan with the General Manager forthcoming menu changes.
  • Plan to achieve a weekly food percentage as budgeted.
  • To plan the training of Kitchen Team.
  • Achieve a reduction of labour turnover, without compromising the operation.
  • To plan rates of work & weekly organisation of staff.
  • To plan the purchase, supply and receipt of all goods in.
  • To attend the weekly management meeting with a view to creating one voice across the team.
  • To communicate the standards of food presentation and equipment.
  • Develop the art of salesmanship in all matters of staff by example to improve product knowledge across the departments.
  • To discuss with members of staff all new methods & sales ideas.
  • To ensure that product is promoted to the front of house team before it reaches its best before date.
  • Liaising with the General Manager regarding any vacancies.
  • To take part in 2nd line interviews with the General Manager/Business Consultant.
  • To undertake induction along with the General Manager of all staff under your control.
  • To discipline staff where necessary in conjunction with the company policy / General Manager.
  • To establish with the General Manager & Business Consultant all necessary internal controls for stocks, keys, tills & security of the premises.
  • To maintain stock levels of food items in line with company standards.
  • To provide accurate weekly & monthly stock takes & staffing levels to the General Manager to enable him to establish statistics on profitability.
  • To establish a complaints procedure to keep adequately informed with regards to shortages or quality issues.
Skills and Qualifications for the Head Chef:
  • Previous experience as a Head Chef.
  • NVQ level 2.
  • Basic food hygiene certificates.
  • Must be highly motivated and enthusiastic about furthering a career in the hospitality industry.
Location: Hatton, WarwickSalary: £40,000 - £50,000 per annum
