Job Description

Sous ChefLoch Lomond Gold Club have an exciting position available for a full-time Sous Chef based in Dunbartonshire, Scotland. The successful candidate will earn £29,000. Annualised hours are based on a 42 hour week. Hours worked after that are banked and takenwhen the club is running reduced business levels during the winter season.You will work 5 out of 7 straight shift patterns.Loch Lomond Golf Club is a world class resort with a membership spanning across the globe, it is imperative our staff have the correct attributes to accommodate the needs for the business to grow. You must be approachable, friendly, hardworking, and haveprevious experience in similar operations to the same standards.As a Sous chef you will be joining an experienced brigade of 9 chefs working in our busy Spikes bar kitchen. The role comprises of overseeing and leading a team to produce the highest standards of food for our membership.The chosen candidate will be expected to consistently push the standards of food production and be a well-mannered trainer to teach the junior members of the brigade. This is an excellent opportunity for someone to progress to the next level in their culinaryjourney.It is expected that you are creative, and business focused on achieving margins set, whilst mindful of operational costs that go hand in hand in running a kitchen.This is a fast-paced environment so a good temperament and calm nature whilst under pressure is expected.Role Requirements

  • Hold a SVQ level 2-3 or equivalent.
  • Basic/intermediate and advanced food hygiene certification essential.
  • 2 years minimum at this level.
  • Certification in professional cookery.
  • Minimum 1 years at this level.
  • Work to a high rosette standard or similar operation.
  • Good cost control.
  • Organisational work ethics.
  • Wide knowledge base in varied styles of cuisine.
  • Strong leadership and interpersonal skills with the ability to lead the kitchen team.
  • A creative imagination and pallet when developing dishes and great knowledge of seasonal produce.
  • Strong problem-solving skills - the ability to diagnose problems then develop and recommend solutions.
  • Calm under pressure.
  • Approachable.
  • Good personal hygiene.
Role Responsibilities (not limited to)
  • Leading the kitchen operations to ensure the highest quality and standards of food and related services are delivered to all Members, Guests and Visitors.
  • Ensure an exceptional and consistent level of food service.
  • Maintain a high profile in the kitchen, especially during busy periods.
  • Deal with members and guests confidently and calmly if required by demonstrating first rate customer service skills and excellent communication skills.
  • In conjunction with the Head Chef and Head of F&B, oversee the development and implementation of departmental strategies and ensures implementation of the Loch Lomond brand service strategy and brand initiatives. This will be done by :-
  • Achieving financial targets (both revenues and operating expenses) to maximise operating efficiency.
  • Ensuring the operations meet Loch Lomonds Members needs, ensures staff satisfaction, focuses on growing revenues and maximizes the financial performance of the F&B department.
  • Assist with developing budgets and projecting cash needs against requirements for approval by the Executive Head Chef.
  • Assist the Head Chef with capital budget prioritisation.
  • Monitor the profitability and performance of the kitchen.
  • Keep up to date on key trend and techniques in relation to cooking and preparing food, generate ideas for and deliver innovative dishes.
  • Drive the development of an innovative and evolving approach to food service.
  • focusing on attention to detail, for instance speed of service, and proactive, positive interaction with service team.
