Job Description

Head Chef required for a Boutique Hotel, located in the Rye area, East Sussex.As Head Chef the ideal candidate for this role will have previous restaurant / brasserie / gastro pub style experience. You will have a passion and enthusiasm in your work.The role of Head Chef will require you to supervise, train, motivate, develop and lead a team within the kitchen to ensure the smooth delivery of service to maintain standards and reputation. This is a hands on role and requires good kitchenmanagement to include health and safety / cost control etc.The Head Chef role, will be responsible for:

  • New menu development in advance of season and with dish costing, in partnership with F&B Manager
  • Providing staff rota and optimizing salary costs for operation whilst maintaining high standards
  • Selecting suppliers and negotiating prices with them, to ensure quality of ingredients and customer value for money
  • Helping chefs develop their skills and knowledge through training and by encouraging them
  • Knowledge and effective implementation of the kitchen departments HACCP, Health & Safety and cleaning procedures and schedule.
