Job Description

The Pike & Eel Hotel and Marina is set on the riverside of the Great River Ouse, this independent, newly refurbished hotel and restaurant is setting up for this summer’s season and is now ready to employ a Head Chef to re-launch and lead the kitchen.The food offering is for a combined 150 cover restaurant and terrace serving modern British all-day dining from traditional breakfast, lunches, afternoon teas and dinners. The venue is steeped in history and also offers an events marquee where weddings, celebrations and corporate events can be held.We are seeking an ambitious individual who has the proven ability and experience in managing a kitchen team ensuring excellent product and service throughout. Passion for food and good palate combined with hands on approach is essential.Key Responsibilities:

  • Manage the day-to-day operations of the kitchen.
  • Managing a full kitchen team - briefing, supervising and motivating team members.
  • Lead by example, promoting high standards of service, conduct and professionalism in the team.
  • Ensure the delivery of all food service is efficient and food standards are met and maintained.
  • Ensure consistency in quality and create and maintain menu specification sheets.
  • Ensure all preparation for service is done in time and to the agreed standards set.
  • Conduct yourself in a professional manner at all times in the workplace to reflect the company culture and values and ensure a high level of personal and professional grooming standards.
  • Having the ability to multitask and work efficiently under pressure.
  • Assist in achieving and exceeding the food GPs set by management.
  • Stock management - rotation and security of stock, periodical stocktakes.
  • Assist in producing weekly rotas for the kitchen and ensuring staffing levels are appropriate for the business to provide a smooth service while labour cost is kept within agreed budgets.
  • Assist in the process of checking and recording supply invoices.
