Job Description

Sous Chef with potential of being a head chef in the future(Live in available)Salary:£27000-£30000 Live in part of packageLocation: OakhamCompetitive rate of pay on offer + tips & 28 days holiday per year (including bank holidays).I am currently recruiting for an aspiring Sous Chef, who is looking for a role where they can be involved with trying new ideas, show personal cooking flare and develop kitchen management skills.To Assist the Head Chef in achieving longer term food accreditation vision and goals.Ideal candidate will be an Experienced CDP or Junior sous chef and have experience in A la Carte in a rosette standard restaurant and ideally event catering.This role would provide the applicant with agreat deal of freedom of expressionand the main responsibilities for the Sous Chef role would include:

  • Take full command of the kitchen duties and responsibilities in the absence of the Head Chef
  • Taking a lead role in developing & costing the a la carte menu content, food preparation & presentation
  • Taking the lead in the running of the a la carte dinner service meal period, ensure consistency, quality & guest satisfaction with all dishes leaving the kitchen
  • Liaise with the Head Chef on new dishes / recipes and menu content allowing for new trends and popular items
  • Mentor & train the Apprentice Commis Chef
  • Assist the Head Chef with weekly ordering of food supplies
  • Work with the Head Chef to forecasting food revenue & production, monitor food purchase prices & purchasing spend to ensure that the food cost target is met
  • Assist the Head Chef with ensuring the completion & compliance with all HACCP documentation, shift checklists & cleaning procedures
