Job Description

Job PurposeThe Head Chef will be a talented, enthusiastic and hardworking individual who has the ability to work and motivate others in a challenging environment. Reporting to the Retail Manager you will be expected to deliver exceptional service to both visitors and customers.As a leader of the catering team, you will have responsibility for the training and development of all team members. Responsible for the cleaning and maintaining of the kitchen and facilities to include all aspects of Health and Safety and food handling.As Head Chef you will have full control of the kitchen and will be responsible for monthly income streams and GP margins working to the Autograph Brand standards.Full time (40 hours per week, Monday to Friday, with some weekend working as and when required) Responsibilities

  • To assist the catering manager in leading and managing the QSHE (Quality, Safety, Health and Environment) processes as priority every day.
  • Understand and meet the needs of the Customer menu, delivering portion control, right and first time.
  • Communicate regularly with the client and customers you are responsible for across your unit/units.
  • Ensure that customer complaints are resolved to the customer satisfaction and action is taken promptly to prevent re occurrence
  • Assist the Retail Manager to manage the P&L accounts
  • Improve standards of service and quality of food
  • Promote the unit and act as a company advocate at all times
  • Supervise, co-ordinate, motivate, train and work with your team to provide a quality service
  • Plan and produce duty rosters ensuring effective and economic deployment of the team
  • To be responsible for ordering all stock of foods, non-foods with suppliers and hospital staff on requirements
  • Responsible for ordering and the implementation of team member uniform.
  • Plan, organise and monitor controls of food quality, presentation and service.
  • Ensure that all kitchen equipment is maintained at all times.
  • Prepare food using fresh ingredients to the Autograph Brand standard.
  • Prepare menus and develop recipes to the Autograph Brand standard
  • Ensure all team members are working in line with current legislation at all times.
  • Operate, utilise and manage relevant catering IT systems (i.e. EPOS, Saffron) as appropriate.
    • Knowledge Skills & Experience
  • Previous Catering experience within a similar environment.
  • Supervisory/Management skills.
  • Relevant clearance required by the unit.
  • Appropriate level of numeric, literate and communication skills to perform the duties of this role.

  • Must have a proven track record in the successful provision of catering services

  • Excellent knowledge of the catering industry and sector trends.
  • Compliance requirements: Disclosure Scotland or relevant security checks as required by the site.
