Rhubarb Recruitment is recruiting for a Head Chef for a very busy fine dining Steak House in Bristol. The restaurant caters for 2000 covers per week with 15 kitchen staff, using start-of-the-art equipment, Paco Jet, Rational I Vario cooking centrex, witha heavy focus on open-fire cooking. The menu is seasonal, locally produced and all produced in-house. The restaurant is all about fine dining for everyone; with slick, engaging service, top-quality food, and a team whose knowledge is as strong as its passion.The open kitchen showcases charcoal grills and dry ageing cabinets displaying whole cuts of beef ready to be cut into signature steaks. Beef is selected from pastured focused farms in the southwest, using native breeds, dry-aged for a minimum of 35 days.In-house butchers cut the steaks fresh for each service. House cuts are generally larger steaks designed for sharing; these could range from 1kg Tomahawks & Porterhouses to the prize Chateaubriand. Steaks are cooked over charcoal and wild cherry wood forextra flavour.YouAs Head Chef will oversee all aspects of professional kitchen management, maintaining the highest standards of food, service, and leadership. You will create seasonal dishes using local produce from our suppliers, whilst supervising stock control, both incomingand outgoing as well as ordering. You will need to have a strong and resilient personality that can stay focused and handle a busy service at a very high standard.This is the perfect opportunity for someone driven, who will have the chance to be instrumental in the continual growth, ongoing development and success of the business. You must be capable of positively managing and influencing a large team and deliveringpositive energy to the whole kitchen team.Salary£42k basic salary £4k per annum tips (guaranteed)1.5% profit share bonus (currently at around £5k)
