Are you a dedicated Head Chef that is passionate about quality and exiting food but does not want to work 24/7My client, based on the outskirts of Accrington are looking for a dedicated Head Chef who will be responsible for management of the company’s kitchens and excellent food service.Responsibilities All sections of the main kitchen, including potwash area Store cupboard in back restaurant Courtyard area & bins Outdoor fridge• Maintaining and continually improving the quality of food• Ordering of food & non-food kitchen supplies according to business levels & budget• Constant development of new menus & dishes• Forward planning throughout the year for seasonal menus (including Christmas and events)• Creation of the kitchen recipe book with photographs• To wear the correct uniform and PPE at all times• Ensuring the company’s 5 star Food Hygiene Rating is maintained.• Daily checking of the kitchen rotas to ensure correct staffing for levels of business to ensure the smooth running of kitchen staff, any prep staff & KP’s.• Implementation and execution of daily, weekly & deep cleaning schedules• Overseeing kitchen porters & junior members of F&B staff involved in kitchen work, ensuring the proper standards of work are attained• Training of KP’s & part-time staff on correct procedures in kitchen• Food prep & cleaning planning on a daily basis via the kitchen business sheets• Maintenance of kitchen equipment, logging issues & notifying the relevant person when required• Updating COSSH as required.• All Risk Assessment documents are up to date.• Ensuring allergens folder is up to date at all times.• Training Front of House/ Banqueting staff on their knowledge on food, allergens & selling techniques• Building relationships with suppliers to ensure best rates• Checking of deliveries for quality, mispicks & returns to ensure efficient ordering and returns when required• Ensuring all invoices are checked and stored correctly for Accounts• Working to achieve a Food Cost of Sale of 26% across the year.This role, due to the nature of the business has much more sociable working hours than your normal Head Chef role and requires a passionate ideas person to drive an already award winning business forward into a very busy 2020.The salary on offer for this role will be circa £28k per annum with some flexibility for the perfect candidate.If this sound like your dream role then please send your CV via this advert or call Victoria OConnor NOW on for more information.Please note that due to high volumes of applications received, only short listed candidates will be contacted.
